Ingredients

  • 3 cups cooked white rice
  • 150 grams ham
  • 1 medium carrot
  • 1 cup green peas
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sesame oil
  • 2 cloves garlic
  • 2 stalks green onion
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon vegetable oil

Directions

Step 1

Dice the ham into small bite-sized cubes. Peel and finely dice the carrot. Mince the garlic cloves and slice the green onions thinly, separating the green and white parts.

Step 2

Heat a large non-stick skillet or wok over medium heat and add the vegetable oil.

Step 3

Once the oil is hot, add the minced garlic and the white parts of the green onion. Stir-fry for about 30 seconds until fragrant.

Step 4

Add the diced ham and cook for 2-3 minutes until lightly browned and warmed through.

Step 5

Add the diced carrot and green peas to the pan, stir-frying for another 2-3 minutes until the vegetables are tender but still brightly colored.

Step 6

Push the ham and vegetables to one side of the skillet and pour the sesame oil into the cleared space. Add the cooked rice, breaking up any clumps with a spatula or spoon.

Step 7

Mix the rice thoroughly with the ham and vegetables, spreading everything evenly in the skillet.

Step 8

Drizzle the soy sauce and mirin over the rice mixture. Sprinkle in the salt and black pepper to taste. Stir to evenly distribute the seasonings, ensuring all the rice is coated with the sauce.

Step 9

Cook for another 2 minutes, stirring frequently, until the rice has absorbed the flavors and is lightly toasted.

Step 10

Remove the skillet from heat and garnish the dish with the green parts of the sliced green onion.

Step 11

Serve immediately as a main dish or side, and enjoy Fusako's Japanese Ham Rice!
