Ingredients

  • 1 lb Ground turkey
  • 1 tbsp Olive oil
  • 1 large Yellow onion, diced
  • 3 Garlic cloves, minced
  • 2 medium Bell peppers, diced (any color)
  • 28 oz Canned diced tomatoes
  • 15 oz Canned kidney beans, drained and rinsed
  • 15 oz Canned black beans, drained and rinsed
  • 15 oz Canned tomato sauce
  • 1 cup Chicken broth
  • 2 tbsp Chili powder
  • 1 tbsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Cayenne pepper (optional, for heat)
  • 0.25 cup Chopped fresh cilantro (optional, for garnish)
  • 0.5 cup Shredded cheese (optional, for garnish)
  • 0.25 cup Sour cream (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon as it cooks. This should take about 5-7 minutes. Transfer the cooked turkey to the crock pot.

Step 3

In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds. Transfer the onion and garlic mixture to the crock pot.

Step 4

Add the diced bell peppers, canned diced tomatoes (with their juices), kidney beans, black beans, tomato sauce, and chicken broth to the crock pot.

Step 5

Sprinkle the chili powder, ground cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using) over the ingredients in the pot.

Step 6

Stir all the ingredients together until evenly mixed.

Step 7

Cover the crock pot with the lid and cook on low for 6-8 hours, or on high for 3-4 hours. Stir occasionally if you are able to check on it during cooking.

Step 8

Taste the chili before serving and adjust the seasoning if needed (add more salt, pepper, or spices to taste).

Step 9

Serve the turkey chili warm, garnished with chopped cilantro, shredded cheese, and sour cream if desired.
