Ingredients

  • 4 medium-sized Yellow potatoes
  • 1 cup Cornmeal
  • 4 cups Water
  • 2 tablespoons Butter
  • 0.25 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder (optional)
  • 1 tablespoon Chopped parsley (for garnish, optional)

Directions

Step 1

Peel the yellow potatoes and cut them into evenly sized chunks. Rinse the pieces under cold water to remove excess starch.

Step 2

In a large pot, bring 4 cups of lightly salted water to a boil. Add the potato chunks and cook for 15-20 minutes, or until they are fork-tender.

Step 3

While the potatoes cook, prepare the cornmeal mixture. In a separate medium pot, bring 2 cups of water to a boil. Gradually add the cornmeal while stirring continuously to prevent clumping.

Step 4

Lower the heat to medium-low and cook the cornmeal for 8-10 minutes, stirring frequently, until it thickens and reaches a smooth consistency.

Step 5

Once the potatoes are cooked, drain them and transfer them back into the pot. Mash them with a potato masher or fork until smooth.

Step 6

Add the butter, heavy cream, salt, black pepper, and garlic powder (if using) to the mashed potatoes. Mix well to combine.

Step 7

Gradually fold the prepared cornmeal into the mashed potatoes, stirring until the two are fully incorporated and no lumps remain.

Step 8

Taste and adjust the seasoning with additional salt or pepper if desired.

Step 9

Serve the Fufu Corn Mashed Potatoes warm, garnished with chopped parsley for a pop of color, if desired.
