Ingredients

  • 3 large ripe yellow plantains
  • 6 cups water
  • 1 teaspoon kosher salt
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 large garlic cloves, minced
  • 1 teaspoon fresh lime juice
  • 0.5 teaspoon black pepper
  • 1 tablespoon optional: fresh cilantro, chopped for garnish

Directions

Step 1

Peel the yellow plantains. To do this, use a sharp knife to cut off both ends, then make a shallow vertical slit along the peel. Gently remove the peel with your hands.

Step 2

Cut the peeled plantains into 1-inch thick slices.

Step 3

In a large pot, bring 6 cups of water to a boil and add 1 teaspoon of kosher salt.

Step 4

Add the sliced plantains to the boiling water and reduce the heat to medium. Let the plantains simmer until soft, about 15–20 minutes.

Step 5

While the plantains cook, heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1–2 minutes. Remove from heat and set aside.

Step 6

Once the plantains are soft, drain them and transfer them to a large mixing bowl.

Step 7

Add the unsalted butter, garlic oil mixture, lime juice, and black pepper to the plantains.

Step 8

Using a potato masher or a large fork, mash the plantains until smooth and well combined. For a chunkier texture, leave some small pieces of plantain intact.

Step 9

Taste and adjust seasoning, adding more salt, lime juice, or pepper as needed.

Step 10

Transfer the mashed plantains to a serving dish and sprinkle with fresh chopped cilantro, if using.

Step 11

Serve warm as a side dish alongside your favorite main course. Enjoy!
