Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.75 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup buttermilk
  • 0.33 cup vegetable oil
  • 1 piece large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 0.25 cup extra chocolate chips for topping (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or grease it lightly with nonstick spray.

Step 2

In a large mixing bowl, sift together the all-purpose flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt. Mix until well combined.

Step 3

In a separate medium bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract until smooth.

Step 4

Make a well in the center of the dry ingredients and pour in the wet ingredients. Gently fold the mixture together using a spatula or wooden spoon. Be careful not to overmix; it's okay if a few lumps remain.

Step 5

Fold the chocolate chips into the batter until evenly distributed.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. If desired, sprinkle additional chocolate chips on top for an extra chocolaty touch.

Step 7

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a muffin comes out with a few moist crumbs (not wet batter).

Step 8

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature and enjoy these fudgy delights with a glass of milk or your favorite hot beverage!
