Ingredients

  • 1 cup Dried apricots
  • 1 cup Dried prunes (pitted)
  • 0.5 cup Raisins
  • 0.5 cup Dried apples
  • 1 Cinnamon stick
  • 4 Whole cloves
  • 0.25 cup Sugar
  • 6 cups Water
  • 2 tablespoons Lemon juice
  • 1 tablespoon Potato starch or cornstarch
  • 2 tablespoons Cold water

Directions

Step 1

In a large pot, combine the dried apricots, prunes, raisins, and dried apples.

Step 2

Add the cinnamon stick, whole cloves, sugar, and water to the pot.

Step 3

Place the pot over medium heat and bring the mixture to a simmer. Stir occasionally to dissolve the sugar.

Step 4

Once the soup is simmering, reduce the heat to low. Cover the pot and let the mixture gently simmer for about 20-25 minutes, or until the dried fruits are plump and tender.

Step 5

Remove the cinnamon stick and whole cloves from the pot using a slotted spoon or small strainer.

Step 6

Stir in the lemon juice for a bright, tangy flavor.

Step 7

In a small bowl, mix the potato starch or cornstarch with cold water until smooth.

Step 8

Slowly pour the starch mixture into the soup while stirring constantly. This will thicken the soup slightly.

Step 9

Cook the soup for an additional 2-3 minutes, stirring occasionally, until the soup thickens to your desired consistency.

Step 10

Remove the pot from heat and let the soup cool slightly.

Step 11

Serve the fruit soup warm, at room temperature, or chilled. It can be enjoyed on its own or paired with a dollop of whipped cream or yogurt.
