Ingredients

  • 3 pounds pork loin roast
  • 2 large apples
  • 1 cup dried apricots
  • 0.5 cup cranberries (fresh or dried)
  • 1.5 cups apple cider
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Peel, core, and slice the apples into thin wedges. Set them aside.

Step 2

Place the pork loin roast in the bottom of your slow cooker.

Step 3

Scatter the apple slices, dried apricots, and cranberries around and on top of the pork roast.

Step 4

In a small mixing bowl, whisk together the apple cider, honey, cinnamon, nutmeg, cloves, salt, and black pepper. Pour the mixture over the pork and fruit in the slow cooker.

Cover and cook on low heat for 8 hours, or until the pork is tender and fully cooked (internal temperature of 145°F).

Once the pork is cooked, carefully remove it from the slow cooker and place it on a cutting board, tenting it with foil to rest.

Turn the slow cooker to high heat. In a small bowl, mix the cornstarch with water to make a slurry. Stir the slurry into the cooking liquid and fruits in the slow cooker.
