Ingredients

  • 1 cup Basmati rice
  • 1 cup Wild rice
  • 4 cups Water
  • 1 teaspoon Salt
  • 2 tablespoons Unsalted butter
  • 1 medium Onion, finely chopped
  • 0.5 cup Dried cranberries
  • 0.5 cup Dried apricots, chopped
  • 0.5 cup Toasted pecans, roughly chopped
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground cumin
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 0.25 teaspoon Freshly ground black pepper

Directions

Step 1

Rinse the basmati and wild rice under cold water until the water runs clear. This removes excess starch and helps prevent clumping.

Step 2

In a medium saucepan, bring 4 cups of water to a boil. Add the basmati rice, wild rice, and 1 teaspoon of salt. Stir well, reduce the heat to low, cover, and simmer for 35–40 minutes, or until the rice is tender and the water has been absorbed.
