Ingredients

  • 2 large peach
  • 120 grams ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon olive oil
  • 4 slices multigrain or sourdough bread
  • 1 tablespoon butter
  • 120 grams berries (such as blueberries, strawberries, or raspberries)
  • 1 tablespoon mint leaves
  • 0.5 teaspoon cinnamon

Directions

Step 1

Halve the peaches, remove the pits, and set them aside.

Step 2

In a small bowl, mix the ricotta cheese with 1 tablespoon of honey, vanilla extract, and a pinch of cinnamon until smooth.

Gently stuff the ricotta mixture into the cavity of each peach half and brush the cut side lightly with olive oil.
