Ingredients

  • 1 cup Fresh strawberries
  • 1 cup Fresh mango chunks
  • 1 cup Fresh blueberries
  • 3 tablespoons Honey
  • 1.5 cups Greek yogurt (plain or vanilla)
  • 0.5 cups Milk (dairy or plant-based)
  • 1 teaspoon Vanilla extract

Directions

Step 1

Wash and prepare the fruits. Hull the strawberries, peel and cube the mango, and rinse the blueberries.

Step 2

In a blender or food processor, purée the strawberries with 1 tablespoon of honey until smooth. Pour into a small bowl and set aside.

Step 3

Rinse the blender, then purée the mango with 1 tablespoon of honey until smooth. Pour into another bowl and set aside.

Step 4

Rinse the blender again, then purée the blueberries with the remaining 1 tablespoon of honey until smooth. Pour into a third bowl and set aside.

Step 5

In a separate medium bowl, whisk together the Greek yogurt, milk, and vanilla extract until smooth and creamy.

Step 6

Layer the popsicle molds with alternating spoonfuls of fruit purée and the creamy yogurt mixture to create a swirl effect. Use a skewer or popsicle stick to lightly swirl the layers if desired.

Step 7

Insert a popsicle stick into each mold and freeze for at least 6 hours, or until completely solid.
