Ingredients

  • 2 cups Old-fashioned rolled oats
  • 1.5 cups All-purpose flour
  • 0.75 cup Light brown sugar
  • 0.25 cup Granulated sugar
  • 0.75 cup Unsalted butter, melted
  • 2 teaspoons Vanilla extract
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1.5 cups Fruit preserves (e.g., raspberry, strawberry, or apricot)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper, leaving some overhang for easier removal.

Step 2

In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt.

Step 3

Pour the melted butter and vanilla extract into the dry ingredients. Stir with a wooden spoon or spatula until the mixture becomes crumbly and evenly moistened.

Step 4

Set aside 1 cup of the oatmeal mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared baking pan to create an even crust.

Step 5

Spread the fruit preserves over the crust layer, leaving about a 1/4-inch border around the edges to prevent sticking during baking.

Step 6

Sprinkle the reserved oatmeal mixture over the fruit layer, ensuring it is evenly distributed but still slightly crumbly.

Step 7

Bake in the preheated oven for 25–30 minutes, or until the top is golden brown and the preserves are bubbly.

Step 8

Remove the pan from the oven and allow the bars to cool completely in the pan, about 1 hour.

Step 9

Once cooled, use the parchment paper overhang to lift the bars out of the pan. Cut into 12 equal squares or bars and serve.

Step 10

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
