  • 180 grams All-purpose flour
  • 115 grams Unsalted butter, cold and cubed
  • 50 grams Granulated sugar
  • 1 pinch Salt
  • 1 large Egg yolk
  • 2 tablespoons Ice water
  • 200 grams Cream cheese, softened
  • 60 grams Powdered sugar
  • 2 tablespoons Heavy cream
  • 1 teaspoon Vanilla extract
  • 250 grams Fresh fruits (e.g., berries, kiwi, or mango)
  • 2 tablespoons Apricot jam
  • 1 tablespoon Water (for glaze)

Directions

Step 1

Preheat the oven to 180°C (350°F). Grease a mini tartlet pan with butter or non-stick spray.

Step 2

In a mixing bowl, combine the flour, sugar, and salt. Add cold, cubed butter and rub it into the dry ingredients with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Step 3

Add the egg yolk and ice water. Gently bring the dough together, being careful not to overwork it. Form the dough into a disc, wrap in plastic wrap, and refrigerate for 15-20 minutes.
