Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic cloves (minced)
  • 1 cup Chicken broth
  • 0.25 cup Lemon juice (freshly squeezed)
  • 2 tablespoons Capers (drained)
  • 2 tablespoons Fresh parsley (chopped, optional for garnish)

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Pound them to an even thickness, about 1/2 inch thick, using a meat mallet or rolling pin.

Step 2

Season both sides of the chicken breasts with salt and black pepper.

Step 3

Dredge the chicken breasts in the all-purpose flour, shaking off any excess flour.

Step 4

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the floured chicken breasts and cook for 3-4 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate and set aside.
