Ingredients

  • 2 pounds Beef chuck, cut into 2-inch cubes
  • 2 tablespoons All-purpose flour
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cups Yellow onions, finely chopped
  • 4 cloves Garlic, minced
  • 3 pieces Carrots, peeled and sliced
  • 2 stalks Celery, chopped
  • 2 tablespoons Tomato paste
  • 3 cups Dry red wine (Burgundy is ideal)
  • 2 cups Beef stock
  • 2 pieces Bay leaves
  • 2 sprigs Fresh thyme sprigs
  • 8 ounces Mushrooms, cleaned and quartered
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

In a large mixing bowl, toss the beef cubes with the flour, salt, and black pepper until evenly coated.

Step 2

In a heavy-bottomed Dutch oven or large pot, heat the olive oil and butter over medium-high heat.

Step 3

Working in batches, sear the beef cubes until browned on all sides. Remove the beef to a plate and set aside.

Step 4

In the same pot, add the onions, garlic, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened and aromatic.

Step 5

Stir in the tomato paste and cook for another 1-2 minutes to develop its flavor.

Step 6

Reduce the heat to medium and pour in the red wine, scraping the bottom of the pot to deglaze and release any browned bits.

Step 7

Add the beef stock, bay leaves, and thyme sprigs. Return the browned beef (with any accumulated juices) to the pot.

Step 8

Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 1.5 to 2 hours, stirring occasionally, until the beef is tender.

Step 9

In the last 30 minutes of cooking, stir in the quartered mushrooms and continue simmering uncovered to allow the sauce to reduce and thicken.

Step 10

Remove the bay leaves and thyme sprigs. Adjust seasoning with salt and pepper if needed.

Step 11

Serve hot, garnished with fresh parsley, alongside crusty bread, mashed potatoes, or buttered noodles.
