Ingredients

  • 4 large Yellow onions
  • 3 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1.5 cups Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Ground nutmeg
  • 1 cup Shredded Gruyere cheese
  • 0.5 cup Breadcrumbs
  • 1 tablespoon Olive oil
  • 1 tablespoon Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a baking dish large enough to fit four onions snugly.

Step 2

Peel the onions and slice off the very top and bottom to create flat edges. Place the onions in a large pot of boiling water and parboil for 10 minutes. Drain and set aside to cool slightly.

Step 3

In a medium saucepan, melt the butter over medium heat. Add the flour and whisk constantly for 1-2 minutes to create a roux.

Step 4

Slowly pour in the milk while continuing to whisk, ensuring no lumps form. Cook for 3-5 minutes, or until the sauce thickens and coats the back of a spoon.

Step 5

Stir in the salt, black pepper, and ground nutmeg. Remove the saucepan from heat and mix in half of the Gruyere cheese until melted and smooth.

Step 6

Cut a small hollow in the top center of each onion to create a cavity. Place the onions in the prepared baking dish.

Step 7

Spoon the cheese sauce generously over each onion, ensuring they are well-coated.

Step 8

In a small bowl, mix the breadcrumbs, remaining Gruyere cheese, olive oil, and parsley. Sprinkle this mixture evenly over the onions.

Step 9

Bake in the preheated oven for 30-35 minutes, or until the onions are tender and the topping is golden and crispy.

Step 10

Allow the dish to cool slightly before serving. Enjoy your Baked Onions Au Gratin as a side or standalone dish!
