Ingredients

  • 6 large Egg yolks
  • 150 grams Granulated sugar
  • 60 ml Amaretto liqueur
  • 300 ml Heavy cream
  • 6 large Egg whites
  • 50 grams Powdered sugar
  • 50 grams Almonds, toasted and finely chopped
  • 30 grams Ladyfinger cookies, crushed (optional for garnish)

Directions

Step 1

Step 1: Prepare individual soufflé molds or ramekins by wrapping a strip of parchment paper around the outside of each mold, extending about 2 cm above the rim. Secure the parchment with tape or kitchen string to form a collar.

Step 2

Step 2: In a heatproof bowl, whisk together the egg yolks and granulated sugar. Place over a pot of simmering water (double boiler) and whisk constantly until the mixture thickens and becomes pale, about 5-7 minutes. Remove from heat.

Step 3

Step 3: Gradually whisk the Amaretto into the egg yolk mixture until fully incorporated. Let the mixture cool to room temperature.

Step 4

Step 4: In a separate bowl, whip the heavy cream to soft peaks. Gently fold the whipped cream into the cooled egg yolk mixture, ensuring the mixture remains light and airy.

Step 5

Step 5: In a clean bowl, whisk the egg whites to soft peaks. Gradually add the powdered sugar, whisking until stiff, glossy peaks form.

Step 6

Step 6: Gently fold the egg white mixture into the Amaretto cream base in three additions, taking care not to deflate the mixture.

Step 7

Step 7: Spoon the mixture evenly into the prepared ramekins, filling to just above the rim and utilizing the parchment paper collar for height.

Step 8

Step 8: Freeze the soufflés for at least 4-6 hours, or overnight, until firm.

Step 9

Step 9: To serve, remove the parchment paper collars gently. Garnish the tops with toasted chopped almonds and crushed ladyfinger cookies if desired. Serve immediately.
