Ingredients

  • 2 shots espresso
  • 100 grams granulated sugar
  • 350 milliliters heavy whipping cream
  • 3 units egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon gelatin
  • 2 tablespoons cold water
  • 30 grams dark chocolate shavings (optional, for garnish)

Directions

Step 1

In a small bowl, combine the gelatin and cold water. Let bloom for 5 minutes to hydrate the gelatin.

Step 2

Brew 2 shots of espresso and set aside to cool slightly.

Step 3

In a heatproof bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

Step 4

Set the bowl over a pot of simmering water, making a double boiler, and whisk continuously for about 5 minutes, or until the mixture thickens slightly. Be careful not to scramble the eggs.
