Line an 8x8 inch square pan with baking parchment or plastic wrap, leaving overhang on the sides for easy removal later. Set aside.
Chop the dark chocolate into small pieces and place it in a heatproof bowl along with the unsalted butter. Melt them together over a double boiler or in the microwave in short intervals, stirring until smooth. Let it cool slightly.
In a mixing bowl, whisk the heavy whipping cream until soft peaks form, being careful not to over-whip. Transfer the whipped cream to the refrigerator to keep it cold while preparing the other components.
In another heatproof bowl, whisk together the granulated sugar and egg yolks. Pour the chocolate mousse into the prepared square pan, smoothing the top with a spatula. Cover with plastic wrap and freeze for at least 4-6 hours, or until fully set.
Once frozen, lift the mousse block out of the pan using the parchment or plastic wrap overhang. Cut into 9 squares using a sharp knife, wiping the blade clean between cuts for neat edges.
