Ingredients

  • 200 grams dark chocolate (70% cocoa or higher)
  • 50 grams unsalted butter
  • 300 ml heavy whipping cream
  • 50 grams granulated sugar
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)
  • 1 sheet baking parchment or plastic wrap

Directions

Step 1

Line an 8x8 inch square pan with baking parchment or plastic wrap, leaving overhang on the sides for easy removal later. Set aside.

Step 2

Chop the dark chocolate into small pieces and place it in a heatproof bowl along with the unsalted butter. Melt them together over a double boiler or in the microwave in short intervals, stirring until smooth. Let it cool slightly.

Step 3

In a mixing bowl, whisk the heavy whipping cream until soft peaks form, being careful not to over-whip. Transfer the whipped cream to the refrigerator to keep it cold while preparing the other components.

Step 4

In another heatproof bowl, whisk together the granulated sugar and egg yolks. Set the bowl over a pot of simmering water (do not let the bottom touch the water) and whisk continuously until the mixture thickens slightly and reaches about 160°F (71°C) to ensure safe consumption. Remove from heat and whisk for another 1-2 minutes until slightly cooled.

Pour the chocolate mousse into the prepared square pan, smoothing the top with a spatula. Cover with plastic wrap and freeze for at least 4-6 hours, or until fully set.

Once frozen, lift the mousse block out of the pan using the parchment or plastic wrap overhang. Cut into 9 squares using a sharp knife, wiping the blade clean between cuts for neat edges.

Before serving, dust the top of each square with cocoa powder. Serve immediately and enjoy!
