Ingredients

  • 2 medium carrots
  • 2 celery stalks
  • 1 medium onion
  • 4 garlic cloves
  • 0.5 cup fresh parsley
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 tablespoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 6 cups water

Directions

Step 1

Wash and peel the carrots. Dice them into small pieces.

Step 2

Wash and dice the celery stalks.

Step 3

Peel and roughly chop the onion.

Step 4

Mince the garlic cloves.

Step 5

In a large pot, heat the olive oil over medium heat.

Add the carrots, celery, onion, and garlic to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened and aromatic.

Add the parsley, thyme, bay leaves, salt, black pepper, and water to the pot.
