Ingredients

  • 2 pounds Ground beef
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 2 cups Refried beans
  • 2 tablespoons Taco seasoning
  • 1 15-ounce can Diced tomatoes with green chilies
  • 2 cups Shredded cheddar cheese
  • 10 pieces Large flour tortillas (burrito-size)
  • 1 tablespoon Olive oil or cooking spray
  • 10 sheets Foil or freezer-safe wrap

Directions

Step 1

Heat a large skillet over medium heat and add the ground beef. Cook until browned, breaking it into small crumbles with a spoon, about 5-7 minutes. Drain excess fat if necessary.

Step 2

Add the diced onion and minced garlic to the skillet and cook until softened, about 3-4 minutes.

Step 3

Stir in the taco seasoning, refried beans, diced tomatoes with green chilies (including liquid), and 1 cup of shredded cheddar cheese. Mix well and cook for an additional 3 minutes until the filling is hot and well combined. Remove from heat and let cool slightly.

Step 4

Lay one flour tortilla flat on a clean work surface. Spoon about 1/2 cup of the beef and bean mixture into the center of the tortilla. Fold the sides inward, then roll the tortilla tightly into a burrito shape. Repeat with the remaining tortillas and filling.

Step 5

If eating immediately, heat a skillet over medium heat with a small amount of olive oil or cooking spray. Cook each burrito for 1-2 minutes per side or until golden and crispy. Serve warm.

Step 6

For freezing, wrap each burrito tightly in foil or freezer-safe wrap. Place the wrapped burritos into freezer bags or containers, removing as much air as possible. Label and date the bags. Freeze for up to 3 months.

Step 7

To reheat frozen burritos, remove the foil or wrap and microwave on high for 2-3 minutes or until heated through. Alternatively, bake in a 350°F (175°C) oven for 25-30 minutes, wrapped in foil, until hot.
