Directions

Step 1

In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, ground nutmeg, and ground cinnamon over medium heat. Stir occasionally until the mixture is hot but not boiling.

In a separate bowl, whisk the egg yolks until smooth.

Gradually temper the egg yolks by slowly adding a small amount of the hot milk mixture into them while whisking continuously. This step prevents the egg yolks from curdling.
