Ingredients

  • 2 pounds ground beef
  • 1 medium, finely chopped onion
  • 2 cloves, minced garlic
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 1 large egg
  • 0.25 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 cups mashed potatoes (prepared)
  • 0.5 cup shredded cheddar cheese
  • 1 tablespoon, optional for mashed potatoes butter

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large mixing bowl, combine ground beef, chopped onion, minced garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, and black pepper. Mix thoroughly until well combined, but avoid overmixing to prevent the meatloaf from becoming tough.

Step 3

Transfer the meat mixture to a lightly greased loaf pan or shape it into a loaf on a baking sheet.

Step 4

Bake the meatloaf in the preheated oven for 45 minutes.

Step 5

While the meatloaf is baking, prepare the mashed potato 'frosting' if not already prepared. Warm mashed potatoes and mix in butter (optional) and shredded cheddar cheese until smooth and creamy.

Step 6

After 45 minutes, remove the meatloaf from the oven. Spread the mashed potatoes over the top and sides of the meatloaf to create an even 'frosting' layer.

Step 7

Return the frosted meatloaf to the oven and bake for an additional 15 minutes, or until the mashed potatoes are lightly golden and the meatloaf's internal temperature reaches 160°F (71°C).

Step 8

Remove from the oven and allow the meatloaf to rest for 5–10 minutes before slicing and serving.

Step 9

Serve warm, garnished with additional cheddar cheese or fresh herbs if desired.
