Ingredients

  • 8 cups Whole milk
  • 1 cup Buttermilk
  • 2 tablespoons White vinegar or lemon juice
  • 1 teaspoon Fine sea salt

Directions

Step 1

1. In a large, heavy-bottomed saucepan, pour the whole milk and gradually heat it over medium-low heat until it reaches around 175°F (79°C). Use a kitchen thermometer to monitor the temperature and stir occasionally to prevent scorching.

Step 2

2. Once the milk reaches the target temperature, reduce the heat to low and stir in the buttermilk. Let it sit for 1 minute while the buttermilk starts to curdle the milk.

Step 3

3. Add the white vinegar or lemon juice to the milk mixture and gently stir for about 30 seconds. You should start to see curds and whey separating.

Step 4

4. Remove the saucepan from heat and let it sit undisturbed for 10-15 minutes to allow the curds to fully develop.

Step 5

5. Place a fine-mesh strainer or colander lined with cheesecloth over a large bowl. Carefully pour the curds and whey into the cheesecloth, allowing the whey to drain into the bowl.

Step 6

6. Gently gather the edges of the cheesecloth and tie them together to form a pouch. Hang the pouch (you can tie it to a sturdy spoon or kitchen faucet) over the bowl and let it drain for 1-2 hours, depending on how firm you prefer the cheese.

Step 7

7. After draining, transfer the cheese to a mixing bowl. Stir in the salt and adjust to taste. You can add additional flavorings, such as herbs or spices, if desired.

Step 8

8. Store the fromage blanc in an airtight container in the refrigerator for up to 1 week. Serve chilled or at room temperature with bread, crackers, or fruit.
