  • 4 pieces chicken breasts
  • 1 whole lemon
  • 3 tablespoons olive oil
  • 2 tablespoons fresh parsley
  • 2 teaspoons fresh rosemary
  • 6 cloves garlic
  • 1.5 pounds baby potatoes
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 cup chicken broth

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a small bowl, mix together the juice of one lemon, 2 tablespoons of olive oil, chopped parsley, and rosemary. Set aside.

Step 3

Season both sides of the chicken breasts with salt and pepper.

Step 4

Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of olive oil.

Sear the chicken breasts for 2-3 minutes per side until golden brown. Remove the chicken and set aside.
