Ingredients

  • 1 pound Dried navy beans
  • 6 slices Bacon
  • 1 medium Yellow onion, diced
  • 1 cup Ketchup
  • 0.5 cup Brown sugar
  • 0.25 cup Molasses
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 2.5 cups Water
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Garlic powder

Directions

Step 1

Rinse the navy beans under cold water and remove any debris. Place the beans in a large bowl, cover with water, and soak overnight (or at least 8 hours).

Step 2

Drain the soaked beans and transfer them to a large pot. Cover with fresh water, bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the beans are tender. Drain and set aside.

Step 3

Preheat your oven to 325°F (165°C).

Step 4

In a large oven-safe skillet or Dutch oven, cook the bacon over medium heat until crisp. Remove the bacon and crumble into small pieces. Set aside, keeping the bacon drippings in the skillet.

Step 5

In the same skillet, add the diced onion and sauté in the bacon drippings until softened, about 5 minutes.

Step 6

Stir in the ketchup, brown sugar, molasses, Dijon mustard, apple cider vinegar, water, salt, pepper, and garlic powder. Mix well to combine.

Step 7

Add the cooked navy beans and the crumbled bacon to the skillet, stirring to evenly coat the beans with the sauce.

Step 8

Cover the skillet or Dutch oven with a lid or aluminum foil and place it in the preheated oven.

Step 9

Bake for 2.5 hours, then uncover and bake for an additional 30 minutes, or until the sauce is thickened and bubbly.

Step 10

Remove from the oven and let the baked beans rest for 10 minutes before serving. Enjoy!
