  • 3 medium Zucchini
  • 1 cup Breadcrumbs

  • 1 cup Greek yogurt
  • 0.5 cup Cucumber, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Lemon juice
  • 1 tablespoon Dill, fresh and chopped
  • 1 teaspoon Olive oil

Directions

Step 1

Wash and dry the zucchinis. Slice them into thin rounds, about 1/4-inch thick.

Step 2

Set up a breading station with three bowls: one with flour mixed with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, one with beaten eggs, and one with breadcrumbs mixed with a pinch of salt and pepper.

Dip each zucchini slice first into the flour, then into the beaten egg, and finally coat it with breadcrumbs. Set aside on a plate.
