Ingredients

  • 2 medium zucchini
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1.5 cups breadcrumbs
  • 0.5 cups Parmesan cheese, grated
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, ground
  • 2 cups vegetable oil
  • 2 tablespoons tamarind paste
  • 1 tablespoon honey
  • 1 teaspoon soy sauce
  • 0.5 teaspoon chili flakes
  • 3 tablespoons water

Directions

Step 1

Wash the zucchinis thoroughly. Slice them lengthwise into thin, finger-like strips.

Step 2

Prepare three separate bowls: one with all-purpose flour, one with eggs beaten with milk, and one with a mixture of breadcrumbs, grated Parmesan cheese, dried oregano, salt, and black pepper.

Step 3

Coat each zucchini strip first in the flour, then dip it into the egg mixture, and finally roll it in the breadcrumb mixture. Ensure each strip is evenly coated.

Step 4

In a deep skillet or frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Step 5

Carefully fry the coated zucchini fingers in batches, flipping occasionally, until golden and crispy, about 3–4 minutes per batch. Do not overcrowd the pan.

Step 6

Place the fried zucchini fingers on a plate lined with paper towels to drain any excess oil.

Step 7

To make the tamarind dipping sauce, combine tamarind paste, honey, soy sauce, chili flakes, and water in a small saucepan. Simmer over low heat for 3–5 minutes, stirring occasionally, until the sauce thickens slightly.

Step 8

Transfer the sauce to a small serving bowl and let it cool to room temperature.

Step 9

Serve the hot, crispy zucchini fingers with the tamarind dipping sauce on the side.
