Ingredients

  • 2 cups Cooked jasmine rice
  • 6 ounces Smoked ham, diced
  • 1 cup Frozen peas and carrots mix
  • 2 Eggs, beaten
  • 2 Green onions, thinly sliced
  • 2 cloves Garlic, minced
  • 3 tablespoons Soy sauce (low-sodium)
  • 1 teaspoon Sesame oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 spray Cooking spray

Directions

Step 1

In a large nonstick skillet or wok, heat the pan over medium-high heat and coat with cooking spray.

Step 2

Add the beaten eggs to the pan and scramble them until just cooked through. Remove the eggs from the skillet and set aside.

Step 3

Spray the skillet again and add the minced garlic. Cook for 30 seconds until fragrant.

Step 4

Add the diced smoked ham to the pan and sauté for 2-3 minutes until lightly browned.

Step 5

Stir in the frozen peas and carrots mix and cook for 3-4 minutes, or until heated through and tender.

Step 6

Add the cooked jasmine rice to the skillet, breaking apart any clumps. Stir well to combine the ingredients evenly.

Step 7

Pour in the low-sodium soy sauce and sesame oil. Stir thoroughly to coat the rice and distribute the flavors.

Step 8

Return the scrambled eggs to the skillet, breaking them into small pieces, and mix them into the rice.

Step 9

Season the fried rice with salt and black pepper to taste. Adjust seasonings as necessary.

Step 10

Remove the skillet from heat and add the thinly sliced green onions. Toss lightly and serve warm.
