Ingredients

  • 4 medium russet potatoes
  • 12 ounces kielbasa sausage
  • 1 large yellow onion
  • 2 cloves garlic cloves
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley

Directions

Step 1

Wash and peel the potatoes. Cut them into bite-sized cubes, about 1/2 inch in size. Place them in a bowl of cold water to prevent browning while you prepare the remaining ingredients.

Step 2

Slice the kielbasa into 1/4-inch rounds. Peel and thinly slice the onion. Mince the garlic cloves. Finely chop the parsley and set aside for garnish.

Step 3

Heat 1 tablespoon of olive oil in a large, heavy skillet over medium-high heat. Add the kielbasa slices and cook for 3-4 minutes per side, or until browned. Remove the kielbasa from the skillet and set aside on a plate.

Step 4

Drain the potatoes and pat them dry with a paper towel. Add the remaining 1 tablespoon of olive oil and the butter to the same skillet. Once the butter has melted, add the potatoes in a single layer. Season with salt, black pepper, and paprika. Cook for 8-10 minutes, stirring occasionally, until the potatoes are golden brown and crispy on the outside.

Step 5

Add the sliced onion to the skillet with the potatoes. Cook for 5-7 minutes, stirring occasionally, until the onion is softened and lightly caramelized.

Step 6

Return the browned kielbasa to the skillet along with the minced garlic. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to combine.

Step 7

Taste and adjust seasoning, if necessary. Sprinkle the chopped parsley over the top before serving.

Step 8

Serve hot as a main dish or alongside eggs or a salad for a complete meal.
