  • 0.5 teaspoon Paprika (optional)
  • 2 tablespoons Chopped parsley (optional)

Directions

Step 1

Wash and peel the potatoes, then dice them into small, evenly sized cubes (about 1/2 inch).

Finely chop the onion and garlic; set them aside.

Step 3

Heat 2 tablespoons of olive oil in a large non-stick or cast-iron skillet over medium heat.

Step 4

Add the diced potatoes to the skillet and season with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and paprika if using. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and tender.
