Ingredients

  • 4 medium russet potatoes
  • 1 cup (diced) ham
  • 1 medium (diced) onion
  • 1 medium (diced) red bell pepper
  • 2 cloves (minced) garlic
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon (to taste) salt
  • 0.5 teaspoon (to taste) black pepper
  • 0.5 teaspoon paprika
  • 2 tablespoons (chopped, for garnish) fresh parsley
  • 4 large (optional, for frying on top) egg

Directions

Step 1

Peel and dice the potatoes into small cubes (about 1/2-inch). Place them in a pot of salted water and bring to a boil. Cook for 5-7 minutes, or until just tender. Drain and set aside.

Step 2

Heat 1 tablespoon of olive oil and the butter in a large skillet over medium heat.

Step 3

Add the diced potatoes to the skillet and spread them out in an even layer. Cook for 5-7 minutes without stirring, allowing them to brown on one side.

Step 4

Flip the potatoes gently and continue to cook for an additional 5-7 minutes, stirring occasionally, until golden and crispy. Remove the potatoes from the skillet and set aside.

Step 5

In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion and red bell pepper for 3-4 minutes, or until softened.

Step 6

Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 7

Stir in the diced ham and cook for 2-3 minutes, allowing the ham to warm through and slightly caramelize.

Step 8

Return the crispy potatoes to the skillet. Sprinkle with salt, black pepper, and paprika. Mix well to combine all ingredients.

Step 9

Cook everything together for 2-3 minutes, stirring occasionally, to heat the dish through.

Step 10

If desired, fry eggs in a separate pan to your preferred doneness and place one egg on top of each serving of hash.

Step 11

Garnish the hash with chopped fresh parsley before serving. Serve hot and enjoy!
