  • 0.25 cup Buttermilk
  • 1 cup Vegetable oil
  • 0.5 cup Raw cashews
  • 0.25 cup Fresh parsley
  • 2 tablespoons Capers
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 1 small Garlic clove

Directions

Step 1

Slice the green tomatoes into 1/4-inch thick slices and sprinkle both sides with 1 teaspoon of salt. Let them sit for 10-15 minutes to draw out excess moisture, then pat dry with paper towels.

In a shallow bowl, combine the all-purpose flour, cornmeal, panko breadcrumbs, 1/2 teaspoon of salt, black pepper, and cayenne pepper.

In another shallow bowl, whisk together the eggs and buttermilk until well combined.
