Ingredients

  • 4 pieces white fish fillets
  • 3 medium zucchini

  • 4 cups vegetable oil
  • 2 tablespoons olive oil
  • 3 medium garlic cloves
  • 1 teaspoon red chili flakes
  • 2 cups crushed canned tomatoes
  • 1 teaspoon sugar
  • 2 tablespoons fresh parsley
  • 4 pieces lemon wedges

Directions

Step 1

Rinse the fish fillets under cold water and pat them dry with paper towels. Set aside.

Slice the zucchinis into 1/4-inch-thick rounds. Sprinkle them lightly with salt and set aside on a paper towel to absorb excess moisture.

In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, paprika, and black pepper. Gradually whisk in the cold water until the batter is smooth and free of lumps.
