Ingredients

  • 3 cups all-purpose flour
  • 0.75 cup unsalted butter
  • 1 large egg
  • 0.5 cup cold water
  • 1 tablespoon vinegar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium, finely chopped onion
  • 2 cloves, minced garlic
  • 1 small, finely chopped bell pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons tomato paste
  • 0.5 cup, chopped green olives
  • 0.25 cup raisins
  • 0.5 teaspoon black pepper
  • 2 cups (for frying) vegetable oil

Directions

Step 1

In a large bowl, mix 3 cups of all-purpose flour and 1 teaspoon of salt.

Step 2

Cut 0.75 cup of unsalted butter into small cubes and add to the flour. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Step 3

In a small bowl, beat 1 egg, then mix in 0.5 cup of cold water and 1 tablespoon of vinegar. Gradually add this to the flour mixture, mixing with a fork until it forms a dough.

Step 4

Knead the dough on a lightly floured surface for a few minutes, then wrap in plastic wrap and refrigerate for at least 1 hour.

Step 5

To make the filling, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 finely chopped onion, 2 minced garlic cloves, and 1 small finely chopped bell pepper. Cook until the vegetables are soft.

Step 6

Add 1 pound of ground beef to the skillet. Cook until browned and cooked through, breaking it up with a spoon.

Step 7

Stir in 1 teaspoon of ground cumin, 1 teaspoon of paprika, 2 tablespoons of tomato paste, 0.5 cup of chopped green olives, 0.25 cup of raisins, and 0.5 teaspoon of black pepper. Cook for an additional 5 minutes.

Step 8

Remove the filling from the heat and let it cool.

Step 9

Roll out the dough to 1/8-inch thickness on a floured surface and cut into 5-inch circles.

Step 10

Place about 2 tablespoons of filling in the center of each dough circle.

Step 11

Fold the dough over to enclose the filling, pressing the edges to seal. Crimp the edges with a fork.

Step 12

In a large saucepan or deep skillet, heat 2 cups of vegetable oil to 350°F (175°C).

Step 13

Carefully place the empanadas in the hot oil, a few at a time. Fry until golden brown on both sides, about 3-4 minutes per side.

Step 14

Remove the empanadas with a slotted spoon and drain on paper towels.

Step 15

Serve the empanadas warm, and enjoy the crispy, flavorful treat.
