Ingredients

  • 4 eggs
  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 1 lemon
  • 10 mint leaves
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons red chili flakes (optional)

Directions

Step 1

Peel and thinly slice the garlic cloves.

Step 2

Zest the lemon using a fine grater and set the zest aside. Cut the lemon in half and squeeze out 2 tablespoons of juice.

Step 3

Wash and pat dry the mint leaves, then roughly chop them if they are large.

Step 4

Heat the olive oil in a non-stick frying pan over medium heat.

Step 5

Add the sliced garlic to the hot oil and sauté for 1-2 minutes until lightly golden and fragrant. Be careful not to burn the garlic.

Step 6

Crack the eggs into the pan, spacing them evenly. Reduce the heat to medium-low and cook until the whites are set but the yolks are still runny, about 3-4 minutes. For firmer yolks, cook a little longer or cover the pan with a lid briefly.

Step 7

Season the eggs with salt, black pepper, and red chili flakes (if using).

Step 8

Drizzle the lemon juice over the eggs and sprinkle the lemon zest evenly across the pan.

Step 9

Scatter the mint leaves on top of the eggs and cook for another 30 seconds to allow the flavors to meld.

Step 10

Carefully transfer the eggs onto a serving plate, pouring any remaining pan juices and garnishes over them.

Step 11

Serve immediately with crusty bread, warm pita, or a side of greens.
