Ingredients

  • 2 Eggs
  • 2 slices Bread (your choice, such as sourdough or whole grain)

  • 2 teaspoons Mayonnaise

  • 0.25 teaspoon Black pepper
  • 1 teaspoon Vegetable oil
  • 1 leaf Lettuce (optional)
  • 2 slices Tomato (optional, thinly sliced)

Directions

Step 1

Heat a nonstick skillet over medium heat and add the vegetable oil.

Step 2

Crack both eggs into the hot skillet, being careful not to break the yolks. Sprinkle with salt and black pepper.

Step 3

Cook the eggs for 2-3 minutes, until the whites are set and the edges are slightly crispy. If you prefer your yolks firmer, gently flip the eggs and cook for an additional 1-2 minutes.

While the eggs cook, toast the bread slices until golden brown.

Spread butter evenly over one side of each slice of toast. On one slice, spread the mayonnaise on top of the butter.
