  • 2 large egg
  • 1 cup frozen peas and carrots mix
  • 3 stalks green onion (sliced)
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (grated)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat a large wok or skillet over medium-high heat and add 1 tablespoon of vegetable oil.

Step 2

Crack the eggs into the wok and scramble them until just set, then transfer them to a plate and set aside.

Step 3

Add the remaining 2 tablespoons of vegetable oil to the wok, then sauté the minced garlic and grated ginger for 30 seconds until fragrant.

Step 4

Add the frozen peas and carrots mix to the wok, and stir-fry for 2-3 minutes until the vegetables are tender.

Add the cold cooked white rice to the wok and use a spatula to break up any clumps, mixing it thoroughly with the vegetables.

Drizzle the soy sauce and sesame oil over the rice, and toss the mixture to coat evenly.

Step 9

Taste and adjust seasoning if necessary, then serve hot in bowls or on a platter.
