Ingredients

  • 500 g chicken breast
  • 2 tbsp cornstarch
  • 4 tbsp vegetable oil
  • 100 g unsalted cashew nuts
  • 3 cloves garlic cloves
  • 1 medium red bell pepper
  • 1 medium onion
  • 2 stalks green onion
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp honey
  • 100 ml chicken stock
  • 0.5 tsp ground black pepper
  • 0.25 tsp salt

Directions

Step 1

Cut the chicken breast into bite-sized pieces and place in a bowl.

Step 2

Sprinkle the chicken pieces with cornstarch, salt, and pepper, and mix well to coat evenly.

Step 3

Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat.

Step 4

Once the oil is hot, add the cashew nuts and stir-fry for 2-3 minutes until golden brown. Remove the cashews and set them aside.

Step 5

In the same wok, add the remaining 2 tablespoons of vegetable oil. Add the chicken pieces and stir-fry for about 5-6 minutes until the chicken is golden and cooked through. Remove the chicken and set it aside.
