Place the chicken breast in a medium pot with the chicken stock and bring to a boil. Lower the heat, cover, and simmer for about 15 minutes or until the chicken is fully cooked.
Remove the chicken from the pot, allow it to cool, then shred it finely using two forks. Reserve the chicken stock for later use.
In a medium saucepan over medium heat, melt the butter. Add the chopped onion and garlic, cooking until fragrant and translucent, about 3 minutes.
Add the shredded chicken, cream cheese, parsley, salt, and black pepper to the saucepan. Stir well until fully combined. Remove from heat and set the filling aside to cool.
In a large pot, bring 500 ml of the reserved chicken stock and 500 ml of water to a boil. Add 2 teaspoons of salt and 50 grams of butter.
Reduce the heat to low, then add the flour all at once. Stir quickly and continuously with a wooden spoon until the mixture pulls away from the sides of the pot and forms a smooth dough, about 3-4 minutes.
Transfer the dough to a clean surface and let it cool slightly. Knead the dough until it is smooth and pliable, about 5 minutes.
Divide the dough into 20 equal portions. Flatten each portion into a small disc using your hands.
Place about 1 tablespoon of the chicken filling in the center of each disc. Fold and shape the dough into a teardrop shape, encasing the filling completely.
Once all the coxinhas are shaped, dip each one into the beaten eggs, then roll it in breadcrumbs to coat evenly.
In a deep frying pan or fryer, heat the vegetable oil to 175°C (350°F). Fry the coxinhas in batches until golden brown, about 4-5 minutes per batch. Remove them from the oil and drain on paper towels.
