Ingredients

  • 1 cup Dried chickpeas (channa)
  • 1 teaspoon Salt
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 0.5 teaspoon Cumin powder
  • 0.5 teaspoon Chaat masala
  • 2 tablespoons Fresh coriander leaves (optional, for garnish)
  • 2 cups Vegetable oil

Directions

Step 1

Rinse the dried chickpeas thoroughly under cold running water.

Step 2

Soak the chickpeas in a large bowl with enough water to cover them by at least a couple of inches. Allow them to soak overnight or for a minimum of 8 hours.

Step 3

Drain the chickpeas and pat them dry using a kitchen towel or paper towels to remove as much moisture as possible.

Step 4

In a large frying pan or deep fryer, heat the vegetable oil over medium-high heat. Test if the oil is hot enough by dropping in a small piece of chickpea - if it sizzles and rises to the surface, the oil is ready for frying.

Step 5

Carefully add the dried chickpeas to the hot oil in batches to avoid overcrowding. Fry for about 3-5 minutes or until they turn golden brown and crispy.

Step 6

Using a slotted spoon, remove the fried chickpeas from the oil and drain them on paper towels.

Step 7

While the chickpeas are still warm, sprinkle salt, turmeric powder, red chili powder, garam masala, cumin powder, and chaat masala over them. Toss well to ensure even coating.

Step 8
