Ingredients

  • 200 grams Montasio cheese
  • 300 grams Potatoes
  • 1 small Onion
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Peel the potatoes and grate them using a coarse grater. Set them aside.

Grate the Montasio cheese and set it aside as well.

Finely chop the onion.

Step 4

In a large non-stick skillet, heat the olive oil over medium heat.

Add the chopped onion to the skillet and sauté for 2-3 minutes until softened and translucent.

Add the grated potatoes to the skillet, spreading them evenly. Season with salt and black pepper.

Cook the potatoes for about 10 minutes, stirring occasionally, until they start to soften and turn golden brown.

Spread the grated Montasio cheese evenly over the potatoes in the skillet.

Continue cooking over medium heat for another 10-12 minutes, pressing down occasionally with a spatula, until the bottom forms a golden, crisp crust and the cheese is fully melted.

Carefully flip the Frico using a large spatula or slide it onto a plate and then flip it back into the skillet to cook the other side. Cook for an additional 3-5 minutes until both sides are golden and crispy.

Remove the Frico from the skillet and place it on a cutting board or serving plate. Let it cool slightly before slicing into wedges.
