Ingredients

  • 2 pounds ground beef
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 28 ounces diced tomatoes (canned)
  • 2 tablespoons tomato paste
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano (dried)
  • 0.5 teaspoon cayenne pepper
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon brown sugar
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 1 cup shredded cheddar cheese (optional, for garnish)
  • 0.5 cup sour cream (optional, for garnish)

Directions

Step 1

Heat a large Dutch oven or stockpot over medium-high heat. Add the olive oil.

Step 2

Once the oil is hot, add the ground beef. Cook, breaking it apart with a wooden spoon, until browned, about 6–8 minutes. Drain any excess fat and set the beef aside on a plate.

Step 3

In the same pot, add the diced onion and minced garlic. Cook until fragrant and softened, about 3–4 minutes.

Step 4

Add the diced red and green bell peppers to the pot, continuing to cook for another 5 minutes until the vegetables begin to soften.

Step 5

Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Toast the spices for 1 minute to intensify their flavors.

Step 6

Add the browned ground beef back into the pot, followed by the diced tomatoes, tomato paste, beef broth, kidney beans, and black beans. Stir everything to combine.

Step 7

Bring the mixture to a simmer. Reduce the heat to low, cover, and let cook for 45 minutes, stirring occasionally to prevent sticking.

Step 8

After 45 minutes, taste the chili and adjust the seasoning if necessary. Stir in the brown sugar to balance the flavors.

Step 9

Serve the chili hot, garnished with chopped fresh cilantro, shredded cheddar cheese, and a dollop of sour cream if desired.
