  • 8 cups beef broth
  • 14.5 ounce can diced tomatoes (canned, with juice)
  • 0.75 cup quick-cooking barley
  • 1 cup green beans (trimmed and cut into 1-inch pieces)
  • 1 medium zucchini (diced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 whole bay leaf
  • 0.5 teaspoon dried thyme

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Season the stew beef pieces with salt and black pepper. Add them to the pot and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
