Ingredients

  • 1 piece Fresh vanilla bean
  • 0.5 cup Extra-virgin olive oil
  • 2 tablespoons White wine vinegar
  • 1 tablespoon Honey
  • 1 tablespoon Fresh lemon juice
  • 0.5 teaspoon Dijon mustard
  • 0.5 teaspoon Kosher salt
  • 0.25 teaspoon Freshly ground black pepper

Directions

Step 1

Using a sharp knife, slice the vanilla bean lengthwise to expose the seeds. Scrape out the seeds with the back of the knife and set them aside.

Step 2

In a mixing bowl, whisk together the white wine vinegar, honey, fresh lemon juice, Dijon mustard, vanilla bean seeds, salt, and pepper until well combined.

Step 3

Slowly drizzle in the olive oil while whisking vigorously to emulsify the mixture. Continue whisking until the vinaigrette is smooth and well-blended.

Step 4

Taste and adjust seasoning if needed, adding more salt, pepper, or lemon juice to balance the flavors.

Step 5

Transfer the vinaigrette to a glass jar or container with a tight-fitting lid. Shake well before using.

Step 6

Store leftover vinaigrette in the refrigerator for up to one week. Allow it to come to room temperature before serving.
