Ingredients

  • 4 pieces Fresh tuna steaks
  • 4 tablespoons Olive oil
  • 2 whole Lemon
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 pieces Garlic cloves
  • 2 tablespoons Fresh parsley
  • 2 cups Couscous
  • 2.5 cups Vegetable broth
  • 1 cup Cherry tomatoes
  • 1 small Cucumber
  • 0.5 whole Red onion
  • 0.5 cup Feta cheese

Directions

Step 1

Pat dry the tuna steaks with paper towels, rub each piece with 2 tablespoons of olive oil, and season with salt, pepper, and the juice of 1 lemon. Set aside to marinate for 10 minutes.

Step 2

In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes to absorb the liquid.

Step 3

Fluff the couscous with a fork and mix in finely chopped parsley, diced cucumber, halved cherry tomatoes, diced red onion, and crumbled feta cheese. Add the juice of the second lemon and 1 tablespoon of olive oil. Mix well and season with salt and pepper to taste.
