Ingredients

  • 600 grams fresh tuna steaks
  • 60 grams panko breadcrumbs
  • 1 large egg
  • 3 stalks green onions (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 medium red onion (finely diced)
  • 2 medium tomatoes (finely diced)
  • 2 tablespoons fresh cilantro (chopped)
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 pieces burger buns
  • 4 pieces lettuce leaves

Directions

Step 1

1. Roughly chop the fresh tuna steaks into small pieces, then pulse them in a food processor until coarsely ground. Avoid over-processing; the mixture should not be a paste.

Step 2

2. In a large mixing bowl, combine the ground tuna, panko breadcrumbs, egg, green onions, minced garlic, soy sauce, and sesame oil. Mix until well combined.

Step 3

3. Divide the mixture into 4 equal portions and shape them into patties about 2 cm thick. Place the patties on a plate, cover, and refrigerate for 15 minutes to allow them to firm up.

Step 4

4. While the tuna patties chill, prepare the red onion salsa. In a small bowl, combine the finely diced red onion, tomatoes, cilantro, lime juice, olive oil, salt, and black pepper. Stir well and set aside.

Step 5

5. Heat a grill pan or skillet over medium-high heat. Lightly oil the surface to prevent sticking, then cook the tuna patties for 3–4 minutes per side or until golden brown and cooked to your preferred doneness (internal temperature of 60°C/140°F for medium).

Step 6

6. Toast the burger buns lightly on the grill pan if desired.

Step 7

7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a tuna patty. Spoon a generous amount of red onion salsa on top, then add the top half of the bun.

Step 8

8. Serve immediately and enjoy your fresh tuna burgers with red onion salsa!
