  • 1 medium onion
  • 3 garlic cloves

  • 3 cups vegetable or chicken stock
  • 1 cup fresh basil leaves
  • 0.25 cup heavy cream (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon sugar
  • 4 slices crusty bread (for serving, optional)

Directions

Step 1

Start by preparing the tomatoes: Bring a pot of water to a boil, then score an 'X' on the bottom of each tomato with a sharp knife. Boil the tomatoes for 30 seconds, then transfer them to a bowl of ice water. Peel and dice the tomatoes once they are cool enough to handle.

Step 2

Dice the onion and mince the garlic. Heat the olive oil in a large soup pot over medium heat.

Add the onion to the pot and sauté for 5-7 minutes, or until translucent. Add the minced garlic and cook for another 1-2 minutes, stirring frequently to prevent burning.
