Ingredients

  • 2 pounds fresh ripe tomatoes
  • 3 tablespoons extra virgin olive oil

  • 4 cloves garlic cloves

  • 1 teaspoon dried basil
  • 0.25 teaspoons crushed red pepper flakes
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley
  • 6 leaves fresh basil leaves

Directions

Step 1

Blanch the tomatoes by scoring an 'X' on the bottom of each tomato with a knife, then placing them in a pot of boiling water for 30-45 seconds. Remove them and immediately transfer to a bowl of ice water. Peel off the skins, cut out the cores, and dice the tomatoes.

Step 2

Heat the olive oil in a large skillet over medium heat.

Finely chop the onion and sauté it in the olive oil for 5-7 minutes, until softened and translucent.
