Ingredients

  • 4 pieces Chicken breasts
  • 4 cups Fresh tomatoes (chopped)
  • 3 cloves Garlic cloves (minced)
  • 3 tablespoons Olive oil
  • 1 cup Fresh basil leaves (chopped)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Crushed red pepper flakes (optional)
  • 0.5 cups Chicken broth

Directions

Step 1

Season the chicken breasts with half of the salt, black pepper, and dried oregano evenly on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 3

Add the chicken breasts to the skillet and sear for 3-4 minutes per side, until golden brown. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil.

Step 5

Add the minced garlic and sauté for 1 minute until fragrant, being careful not to let it burn.

Step 6

Stir in the chopped fresh tomatoes, the remaining salt and pepper, and the red pepper flakes (if using). Cook for 5 minutes, stirring frequently, until the tomatoes start to soften and release their juices.

Step 7

Add the chicken broth to the skillet and bring to a gentle simmer.

Step 8

Return the seared chicken breasts to the skillet, nestling them into the tomato mixture. Spoon some of the sauce over the chicken.

Step 9

Reduce the heat to low, cover the skillet, and let the chicken simmer for 12-15 minutes, or until fully cooked and no longer pink in the center (internal temperature should read 165°F).

Step 10

Stir in the fresh basil during the last 2 minutes of cooking.

Step 11

Serve the Fresh Tomato Chicken hot, spooning the tomato sauce over the chicken. Pair with pasta, rice, or a side salad.
