Ingredients

  • 4 pieces white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 4 medium ripe tomatoes, diced
  • 0.5 cup fresh basil leaves, chopped
  • 3 pieces garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 4 sheets parchment paper or aluminum foil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Prepare 4 sheets of parchment paper or aluminum foil, large enough to fold over the fish fillets and seal.

Step 3

Drizzle 1/2 tablespoon of olive oil onto the center of each sheet of parchment or foil.

Place one fish fillet on each sheet and season both sides with salt and black pepper.
